Summer Squash Soup

Feel weird about making soup in the heat of summer? Don’t. This delicious summer squash soup has warm flavors and is achieved with just a few ingredients. A luxurious texture was never so easy to achieve.


1 tablespoon extra virgin olive oil

1 yellow onion chopped

1 clove garlic minced

1 teaspoon curry powder*

2 cups of summer squash, peeled and cubed

4 cups of vegetable stock

1 cup full fat coconut milk

½ lime

Salt and pepper to taste

Handful of walnuts, to top 



Add extra virgin olive oil to a pot and heat

Add in yellow onion and cook until translucent

Add in garlic and curry powder until fragrant 

Add in the summer squash 

Add in the stock and coconut milk and bring to a boil

Once boiled, lower heat and simmer for 10 minutes or until squash is tender

Add the contents of the pot to your Domaya™ and puree the soup until smooth

Taste, and season with additional salt and pepper as needed and top with walnuts
