Comforting, creamy, and simple, it’s made with nutritious ingredients you can find at your local grocery store.
▪️ 2 sugar pumpkins
▪️ 1 tbsp olive oil
▪️ 2 medium shallots
▪️ 3 cloves garlic
▪️ 2 cups vegetable broth
▪️ 1 cup milk of your choice
▪️ 2 tbsp maple syrup or agave nectar
▪️ 1/4 tsp each salt, black pepper, cinnamon, nutmeg
Follow these simple steps:
➀ Preheat the oven to 350 degrees Fahrenheit (176 degrees Celsius) and cover the baking sheet with parchment paper.
➁ Slice pumpkin and brush with oil. A fork should easily pierce the skin after baking for 45 to 50 minutes. Take the pumpkin out of the oven, and let it cool for ten minutes.
➂ Add olive oil, shallot, and garlic to a big pot set over medium heat. Cook for 2 to 3 minutes, or until transparent and gently browned.
➃ Add all the ingredients into your blender and blend until smooth.
➄ Then, take the mixture to the pot.
➅ After 5 to 10 minutes of cooking over medium-low heat, taste and add extra seasoning if necessary! Enjoy!
