Simple Blender Pumpkin Soup

Fall is the perfect time to cozy up with a warm, delicious bowl of soup. 🤗⁣⁣

Comforting, creamy, and simple, it’s made with nutritious ingredients you can find at your local grocery store.⁣⁣

Ingredients:⁣⁣

▪️ 2 sugar pumpkins⁣⁣
▪️ 1 tbsp olive oil⁣⁣
▪️ 2 medium shallots⁣⁣
▪️ 3 cloves garlic⁣⁣
▪️ 2 cups vegetable broth⁣⁣
▪️ 1 cup milk of your choice⁣⁣
▪️ 2 tbsp maple syrup or agave nectar⁣⁣
▪️ 1/4 tsp each salt, black pepper, cinnamon, nutmeg⁣⁣

Follow these simple steps:⁣⁣

➀ Preheat the oven to 350 degrees Fahrenheit (176 degrees Celsius) and cover the baking sheet with parchment paper.⁣⁣

➁ Slice pumpkin and brush with oil. A fork should easily pierce the skin after baking for 45 to 50 minutes. Take the pumpkin out of the oven, and let it cool for ten minutes.⁣⁣
⁣⁣
➂ Add olive oil, shallot, and garlic to a big pot set over medium heat. Cook for 2 to 3 minutes, or until transparent and gently browned. ⁣⁣

➃ Add all the ingredients into your blender and blend until smooth.⁣⁣

➄ Then, take the mixture to the pot.⁣⁣

➅ After 5 to 10 minutes of cooking over medium-low heat, taste and add extra seasoning if necessary! Enjoy! ⁣⁣
